Good Ole Fashioned Griddlecakes
Today we’ll talk about good ole Fashioned Griddlecakes, brought up to modern times. The recipe is based on a Pancakes recipe found on the old government issue sacks of flour. A real comfort food-Enjoy!
Ole Fashioned Griddle Cakes-(Makes 8-9 4″ Pancakes)
2 c. whole wheat flour
4 tsp. baking powder
1 tsp. salt
2 TBSP. sugar
1 egg
1 1/2 c. skim milk
1/3 c. Smart Balance Oil
Whisk flour, baking powder, salt & sugar in large bowl, set aside. Beat egg, add milk, then oil. Add liquid mixture to dry mixture. Stir just until mixed (lumpy’s ok.)
Pour 1/3 c. batter onto heated, greased frying pan & cook until they’re covered with bubbles. Flip them over & brown other side.Serve with your favorite pancake toppings! We like Smart Balance spread & Maple Syrup & some fruit on the side.
These pancakes are so delish! A real comfort food. We like pancakes for dinner and a its a great substitute for any meat meal. Since going (mostly) meatless, our LDL has gone down to normal without having to take any meds. Also I think that substituting Smart Balance products for any others has helped too.
